As any real fish cutter knows, 10 inches is the magic length. This blade has all the features of a classic sashimi (Yanagi) knife - flat, half ground on one side, and slight, almost flat hollow grind on the other. The sashimi blade is a unique laminate of VG-10 with 16 layer stainless Damascus forge welded to one side. Though traditionally used as a fish knife by the Japanese, this knife makes the finest slicer of roasts you will ever own.
