The Whole Shebang

Because you like to be prepared, because you couldn't pick just one or two. This set features one of every chef worthy blade that we produce: 14 knives ranging from 12" to 2" and one gorgeous ceremonial carving fork. 100% American made materials that will last a lifetime. You will have the right tool for every job no matter what you're cooking up.

The Western Chef
A nod to our Jackson Hole roots that combines a hefty, Western design with elite steel. Serve up gourmet grub at camp with a clip-point blade that’ll make a grizzly (or sous chef) think twice about sticking their nose in your skillet. Japanese blade-making favors light-weight, super-sharp blades for agile slicing. The Western Chef is about heft and power, sporting a heavy, almost cleaver-width blade for hacking, chopping, and dicing. Given the choice, if your hands itch for a two-handed broadsword rather than a rapier- look no further- this knife is for you. Keep it in your knife roll or wear it on your chaps, the Western Chef will have you ready for rodeo when things get Western in your kitchen. Learn more about the Western Chef.

The Carving Set
Add a sense of ceremony to the time-honored tradition of sharing meat with this fine fork and knife. These instruments make the wielder feel like the king or queen of any feast. The distinctive shape, balance, and thickness of the carving knife are crafted to elevate your feast with elegant slicing. The sharp tip helps maneuver around bones while the extra-thin blade cleanly slices even the most delicate meats. 9 inches is the perfect length for long, single strokes while the harpoon clip-point on the top of the blade makes a fitting homage to New West’s Western roots. The forged, bayonet-fork has a full-sized, ergonomic G10- handle designed for durability and leverage to carve proteins large and small.

The Chris Kidder
The ultimate chef knife for those with the skill to wield it. At the perfect length for slicing everything from sushi to red meats, soft ripe vegetables, or crusty bread, this knife can perform all the chopping, dicing, and general-purpose work of a chef knife while having the added length to cleanly slice the softest food in one long stroke. Unique design aspects include a spine that does not taper for the first 4" of the knife length, maintaining the right amount of stiffness for chopping. Additionally, the wider blade width ensures that Chef's knuckles won't hit the cutting board when chopping. Learn more about the Chris Kidder.

The Superbread
A 100% New West KnifeWorks signature design. As a bread knife it has unparalleled ability to slice crusty, flaky, or delicate baked goods without the same crumbling effect of lesser bread knives. Much more than just a bread knife, this is the ultimate slicer for meats, tomatoes, gravlax, and any other soft food that has a tendency to crush when sliced. Because the edge cuts so aggressively, many chefs use this as their primary knife for prep work as it will cut through a crate of vegetables with virtually no effort. Our unique 'wave' serration gives you an incredibly sharp edge and has the unique capacity to be honed and fully sharpened using a ceramic steel. Learn more about The Superbread

The 8" Chef
For folks who find a traditional 8-inch chef cumbersome or intimidating, the graceful blade shape, tapered tang, and super thin blade grind turn this precision instrument into an extension of your hand. Powder metal steel allows this thin, agile blade to meld power with precision on the professional line and home cutting board alike. Thick steel in front of the handle makes for a blister-free pinch grip. The relatively narrow width of the blade is a departure from the recent fad of making knives extra wide. This makes the "Light-Speed 8" more nimble for slicing and turning cuts while still leaving plenty of clearance for the knuckles. Also, this is the only kitchen knife to make the Kessel Run in under 12 par-secs. Learn more about the 8" Chef.

The 9" Chef
For some, an 8 is too small and a 10 is too big. Either way you slice it, "the 9" hits the sweet spot for many professional and home cooks alike. The elegant, ergonomic design is perfectly balanced so the powder metal blade can do most of the work for you. Learn more about the 9" Chef.

The Teton-Edge Santoku
This Japanese-style blade takes its name from the "three virtues" of slicing, dicing, and mincing. An all-purpose chef knife, the santoku features a generous width for easy scooping while the moderate length and ergonomic design make it extremely agile on the cutting board.

The Fillet
S35VN powder metal is the highest performing steel for a fillet knife. Extreme sharpness and toughness combined allow for a thinner, sharper blade that can bend without breaking or losing its shape. The thin blade is seven inches long and has a multi-stepped taper for optimal flex. The geometry of the blade is designed to match the curve of a fish, with length enough for the deep bones of any animal. The long slicing stroke is stabilized by a full tang.

The Deli
From the bread to all the goodies inside, the Deli is designed for the sandwich connoisseur. Blast out BLTs and Reubens in no time flat. No more crooked or crumbly bagels, no more mutilation of tomatoes- the proprietary serration slices fruits and veggies properly every time. Learn more about the Deli.

The Petty
The ultimate kitchen utility knife. This classic Japanese blade shape works great as a peeling, paring, boning, and carving knife for vegetables, fruits, herbs, and other delicate work while also taking on some of the slicing and dicing jobs of a large chef knife when you don't want to switch back and forth. This popular knife was described by Bon Appetit as "the perfect balance of power and grace." Learn more about the Petty

The Chopper
For decades, the Chopper has been a customer favorite for holidays, birthdays, graduations, weddings, and housewarming parties. A very manageable size, stout handle, and curved belly are ideal for making things like mirepoix. The unique shape makes it a welcome addition to just about any collection. A beautiful gift that gets used every day is a constant reminder of affection AND a wonderful incentive to fall in love with cooking and a healthier lifestyle.

The Mini-Chopper
Are these paring knives on steroids or chef knives with an inferiority complex? The Mini Chopper is a beautiful little workhorse that is small enough to hold in the hand for precision paring jobs but holds its own on the cutting board chopping vegetables and slicing chicken breasts. Learn more about the Mini Chopper

The Paring
The G-Fusion paring knife has a modified "Drop Point Design" which results in a more "forgiving" knife that doesn't get stuck when, for example, coring an apple or removing the eyes of a potato. Once you get used to this unique shape, you'll love it and never want to use another paring knife. The broad belly and generous curve are particularly perfect for those who tend to use a paring knife for everything. Though the blade is small, the handle is ample- giving the blade a firm agility in the hand.
