Many of us at New West KnifeWorks enjoy wild game in our cooking. In this video, Corey shares his "New Style Carpaccio" recipe- a great way to highlight fresh game meat (like elk or antelope). The recipe works equally well with high quality beef. It's a deceivingly simple recipe that enhances natural flavor and tender texture with just a few ingredients.
