At the perfect length for slicing everything from sushi to red meats, soft ripe vegetables, or crusty bread, this knife can perform all the chopping, dicing, and general-purpose work of a chef knife while having the added length to cleanly slice the softest food in one long stroke. Unique design aspects include a spine that does not taper for the first 4" of the knife length, maintaining the right amount of stiffness for chopping. The 8" Chef
For folks who find a traditional 8-inch chef cumbersome or intimidating, the graceful blade shape, tapered tang, and super thin blade grind turn this precision instrument into an extension of your hand. Powder metal steel allows this thin, agile blade to meld power with precision on the professional line and home cutting board alike. Thick steel in front of the handle makes for a blister-free pinch grip. The relatively narrow width of the blade is a departure from the recent fad of making knives extra wide. This makes the "Light-Speed 8" more nimble for slicing and turning cuts while still leaving plenty of clearance for the knuckles. The Fillet
S35VN powder metal is the highest performing steel for a fillet knife. Extreme sharpness and toughness combined allow for a thinner, sharper blade that can bend without breaking or losing its shape. The thin blade is seven inches long and has a multi-stepped taper for optimal flex. The geometry of the blade is designed to match the curve of a fish, with length enough for the deep bones of any animal. The long slicing stroke is stabilized by a full tang. The Paring
