Description

A nimble workhorse.
Particle metallurgy steel allows this thin, agile blade to meld power with precision into an elegant tool that is everything you need and nothing you don’t. Thick steel in front of the handle makes for a blister-free pinch grip. The relatively narrow width of the blade is a departure from the recent fad of making knives extra wide. This makes the "Light-Speed 8" more nimble for slicing and turning cuts while still leaving plenty of clearance for the knuckles. This precision instrument isn’t a club like Mom’s old Wustof Trident.

Use & Care

  • Hand wash with warm soapy water and hand dry for maximum edge retention and stain resistance. For safety and edge protection, store dry knives in their leather sheath, in a wood block, or on a magnet designed to hold knives. For a full tune-up: free lifetime sharpening.
  • Do not put in the dishwasher - this will dull the knife.
  • For edge retention, cut only on wood or softer plastic cutting boards.
  • As needed, apply a light coat of mineral oil to the handle with a soft cloth to enhance vibrance.

The New West Difference

Unmatched Performance

The G-Fusion line features the highest performing knife steel on the market—CPM S35VN particle metallurgy steel. CPM S35VN has an unparalleled combination of: sharpness, toughness, edge-holding, stain resistance, and sharpenability. It’s as practical as it is beautiful.

G-Fusion Handle

G-Fusion handles are made with G10: an aerospace-grade, fiberglass-epoxy composite material that is virtually indestructible. New West developed unique G10 color palettes to enhance the beauty of the tool and inspire kitchen creativity.

American Made

G-Fusion knives are made in the US with American steel and backed by a lifetime guarantee.

Ironwood

Sustainably sourced, richly textured desert ironwood grows in Arizona where the water-depleted environment creates a grain structure so dense that it sinks in water. The extreme density of ironwood makes it a strong and durable choice of handle material.
