At the heart of the Western Chef Knife is CPM S35VN stainless steel—an American-made, powder metallurgy steel known for its exceptional edge retention, toughness, and corrosion resistance. It stays sharp through long prep sessions and heavy use, so you can spend more time cooking and less time sharpening.

The full-tang construction provides balance and control, while the blade geometry offers just enough curve to rock, and plenty of flat edge to chop.
