To share the inspiration behind this refined, monochromatic collection, we sat down with Jessica Milligan, co-owner of New West KnifeWorks, and Ellen Winkler, the brand’s retail marketing director.
Jessica Milligan: Well, hello there. My name is Jessica Milligan, and my husband, Corey Milligan, is the founder of New West KnifeWorks. Together, we own the company. And with me today is a dear friend and colleague, Ellen Winkler.
Ellen Winkler: Hey, Jess! How are you?
Jessica: I'm great! And we’re here to share something really exciting—our newest knife drop.
Ellen: Yes! Jess and I have known each other forever, and with my background in design and her deep expertise in retail, we always talked about creating something together. That idea led us to develop the Miyuki Colorway—a fresh take on New West’s signature G-Fusion knives.
A New Take on Color
Jessica: New West KnifeWorks is known for our bold, vibrant handles. That’s how we got our start. But Ellen and I always felt there was another direction we could explore—something more neutral, more understated, yet just as striking.
Ellen: Exactly. We saw an opportunity to appeal to a different kind of customer—maybe someone new to New West, or maybe a longtime collector looking for something different to complement their colorful knives. The Miyuki Colorway embraces a more subtle, monochromatic aesthetic that aligns with a broader design movement we're seeing in home interiors.
Inspired by Japan
Jessica: A few years ago, Ellen and I traveled to Japan with our families on a ski trip, and we were deeply inspired by the country’s design philosophy.
Ellen: We really embraced the concept of wabi-sabi—finding beauty in simplicity, natural materials, and even imperfection. That philosophy felt like the perfect bridge between Japanese and Western design—something that resonates deeply with the craftsmanship of New West KnifeWorks.
Jessica: We’ve long made a Santoku knife, which has deep roots in Japanese cutlery. But bringing this new colorway to the collection adds another layer of that East-meets-West fusion.
The Meaning Behind “Miyuki”
Ellen: While we were in Japan, we spent a lot of time skiing, and that’s where the name Miyuki comes from.
Jessica: In Japanese, "Yuki" means snow, and "Miyuki" means beautiful snow. It felt like the perfect name—both as a nod to our experience in Japan and as a way to honor the fact that this was a design collaboration between two women.
A Collection Built to Last
Ellen: This month, we’re launching a whole line of knives in the Miyuki Colorway. We also designed a sleek new magnet bar to hold them—something subtle, quiet, and perfectly in tune with the color palette.
Jessica: And this is just the beginning! Over time, we’re rolling out the full seven-piece G-Fusion line and Miyuki steak knives.
Ellen: And here’s the best part—Miyuki is here to stay. This isn’t just a limited release; it’s a permanent addition to the New West KnifeWorks lineup.
